# 41. Learn to make 5 kinds of soup (3/5) – Chipotle Chicken Tortilla Soup

I am the queen of changing a recipe. I am always scouring the internet for new things to make. When it comes time to make them I am always adding a bit of this and a bit of that to modify to our tastes. So when I found this recipe for Chipotle Chicken Tortilla Soup I was excited. I read over the recipe and decided it needed a bit more. I added the salsa, green onions and black beans. The soup was good, but I do think it needed a bit more of a spice kick. We love our hot spices and this was a bit mild for our tastes. BUT all and all a good hearty meal!

Chipotle Chicken Tortilla Soup
1  tablespoon olive oil
1 1/2  teaspoons bottled minced garlic
chicken breast (cut into bite-sized pieces)
1  teaspoon chipotle chile powder
1 teaspoon cumin
1  cup water
1/4  teaspoon salt
1  (14-ounce) can fat-free, less-sodium chicken broth
1  (14.5-ounce) can stewed tomatoes (undrained)
2 stalks of green onions (chopped finely)
2 tablespoons of your favorite salsa
1/2 can black beans (rinsed)
1  cup crushed baked tortilla chips
1/4  cup chopped fresh cilantro

Heat oil in a large saucepan over medium-high heat. Add minced garlic and chicken; sauté 2 minutes. Add chile powder and cumin; stir well. Add water, salt, broth, and tomatoes; bring to a boil. Cover, reduce heat, and simmer 5 minutes. Top with tortilla chips and cilantro.
