This soup is fabulous! So full of flavor and really filling. Insanely easy to put together!
Wow I feel like an infomercial, but it is completely true. I received rave reviews from K. We had so much left over that we were able to have some for lunch the next day and I gave some to my mother and sister! They also couldn’t get enough of it!

# 41. Learn to make 5 kinds of soup (4/5)
1 lb ground beef (you could also use italian sausage)
2 cups onions (chopped)
1 cup carrot (diced)
2 tablespoons garlic (minced)
4 cups chicken broth
1 can Italian-style diced tomatoes
1 can tomato sauce
1 cup mafalda pasta
2 cups fresh spinach (chopped)
1 cup provolone cheese or fresh mozzarella cheese (diced)
1/4 cup parmesan cheese (shredded – for garnish)
4 teaspoons thinly sliced fresh basil (for garnish)
Brown meat in a large saucepan over medium-high heat. Add onions and carrots; saute for a couple of minutes. Stir in garlic and saute another 3 minutes. Add broth, stewed tomatoes, and tomato sauce, and bring to a boil. Make pasta according to package directions. Stir in spinach and cook until wilted. Place diced cheese into serving bowls and pour soup and pasta on top. Garnish with parmesan and basil.
