When it comes to pizza, K and I love them homemade. Sure the pizzas in a pizza shop are good, but there is nothing like making your own. Since we both don’t like the same toppings it is perfect for us. We can add whatever we would like on our own side and not have to worry. I am a BBQ chicken pizza girl while he is a spicy buffalo chicken pizza guy. With this dough you could really make any kind of pizza you wish. The toppings are endless.
BBQ & Buffalo Chicken Pizza
2 1/2 cups flour
1/2 teaspoon salt
1 package (1/4 oz.) dry yeast
1 tablespoon plus 2 teaspoons olive oil
1/3 cup BBQ sauce (we used Jack Daniel’s)
1/4 cup buffalo sauce (we used Texas Pete’s)
12 oz. mozzarella cheese (shredded)
1 teaspoon dried oregano
1 piece celery (thinly chopped)
1 grilled boneless breast of chicken (chopped) *we had some left over from the night before
Heat oven to 400. Lightly grease a 15 X 10 inch baking sheet. Sift flour and salt into a large bowl. Stir in yeast. Make a well in the center and add olive oil and 1 cup lukewarm water. Mix until a soft dough forms. Knead for 5 minutes. (I used a KitchenAid mixer for this part with a dough hook. If you are doing by hand just turn the dough out on to a lightly floured surface and knead gently for 5 minutes).
Roll out dough and press into a lightly oiled (olive oil) baking sheet. Cover and allow to rest for 10 minutes at room temperature, then bake for 5 to 7 minutes.
Remove crust from oven and spread desired sauce (see below). Arrange mozzarella, sprinkle with oregano. Bake until golden, 15 -20 minutes.
Using a pizza cutter or a sharp knife, slice pizza and serve hot.
* For BBQ pizza – Mix BBQ sauce, chicken and some oregano. Spread. Arrange mozzarella, sprinkle with oregano and bake.
* For Buffalo pizza – Mix buffalo sauce, chicken and some oregano. Spread. Arrange mozzarella, line celery along pizza, sprinkle with oregano and bake.
