Spicy Oven-Fried Chicken

After a good romp in the snow on Wednesday I decided to come back and make some homemade oven-fried chicken. We wanted a good meal to warm the soul and this spicy chicken did the trick! I served this dish with veggies and Spinach-Cheddar Mashed Potatoes. What a great way to end a great day!

Spicy Oven-Fried Chicken
3/4 cup buttermilk
1 tablespoon hot pepper sauce
1 tablespoon Dijon mustard
2 cloves garlic (minced)
1/2 teaspoon pepper
2 teaspoons salt
4 chicken breasts (boneless and skinless)
1 cup plain bread crumbs
1/2 cup Parmesan cheese (grated – I used an Italian mix we had in the house)
2 tablespoons flour
2 teaspoons dried thyme
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
2 tablespoons olive oil
Pam spray

In a large ziplock bag, add buttermilk, hot sauce, mustard, garlic, pepper and 1 teaspoon salt. Add chicken and turn to coat. Close and refrigerate at least 4 hours or overnight, turning occasionally.
In a large bowl, combine bread crumbs, cheese, flour, thyme, paprika, cayenne pepper and two tablespoons of the oil; mix well. Remove chicken from marinade one at a time, place in seasoned bread crumb mixture. Turn to coat. Place chicken on a baking rack sprayed with Pam and let sit for 10 minutes so that the crumbs will adhere well. Bake chicken at 400 for 30 minutes or until crispy, golden and baked through. Serve immediately.
