Quick Southwestern Pizza

There are days that I come home from work and just don’t know what to make for dinner.  Sometimes I am just so exhausted that I can’t even think of cooking.  So then I make a dish like this – a simple pizza with a side salad.  Perfect for feeding a hungry man, but also quick and better then take-out.
Not in a rush? Make the pizza crust homemade. Add chicken, pork or even vegetables. There are always so many ways to make a simple pizza!

Quick Southwestern Pizza
1 large (10-oz) pre-baked thin pizza crust (we used a whole wheat)
3/4 cup salsa
1 can of black beans
1 cup shredded Mexican or taco cheese blend
2 Tbsp chopped cilantro

Top crust with salsa, add beans and cheese.  Bake for approximately 10 minutes or until cheese is melted.  Add cilantro and enjoy.
