Key Lime Pie

Key Lime Pie seems to be a favorite for a lot of my friends. I am not for or against it. So when I was deciding on something to make for a 4th of July celebration I thought that a Key Lime Pie would be a good way to go. K was especially excited to find out I was making it. AND of course I had to try out The Pioneer Women’s Key Lime Pie (check out her site for step by step directions!). Who wouldn’t?

Key Lime Pie

Crust
18 whole Graham Crackers
1/3 cup sugar
1/3 cup butter (melted)

Filling
1 tablespoon lime zest (heaping)
1/2 cup lime juice
2 whole egg yolks
1 can (14 oz) sweetened condensed milk

Preheat oven to 350 degrees.

For the crust:
Crush crackers in a food processor. Pour them into a bowl and stir in sugar and melted butter. Press into a pie pan and bake for 5 minutes or until golden and set. Remove from oven and set aside to cool slightly.

For the filling:
Mix lime zest, lime juice, and egg yolks in a mixing bowl. Add in condensed milk and mix on high until smooth and thick. Pour mixture into crust and bake for 15 minutes.

Remove from oven, allow to cool, then refrigerate for at least 1 hour (more if possible).

{I know this is not a picture of the key lime pie – but the pie was sooo good that it was eaten up and I was not able to take a picture of it. So I picked one of Lisa’s pictures to go with the recipe. Check her out..her art is amazing!}
