A Delightful Black Bean Dip

I don’t know about you, but I love Pioneer Women. She inspires me to cook new dishes and to come up with dishes of my own. She is a wonderful cook and if you haven’t taken a look at her website I think you should. You won’t be disappointed.

Now the other day it was a snowy, brisk day. I was searching for a recipe that I could make that was tasty and warm. I came across Ree’s Zannie’s Black-Eyed Pea. I didn’t have all of the ingredients that she did, so I subsituted and changed the recipe a bit. We completely enjoyed it and I am hoping to try it the original way that Ree made it next!

A Delightful Black Bean Dip
1 can Black Beans (14-ounce)
1/4 whole Onion (chopped)
1/4 cup sour cream
1/2 teaspoon cumin
1/2 teaspoon chili powder
1 cup Sharp Cheddar Cheese (grated)
3 tablespoons Salsa
Couple of splashs of hot sauce

Preheat oven to 350 degrees. Drain black beans and partially mash, leaving some whole.
Add all other ingredients, stirring to combine.
Spread into a  baking dish and bake for 20 to 30 minutes until hot and bubbly.

Serve with tortilla chips!
