Wednesday was a quiet day for me. K is now on a new work schedule and the starting school so for the next couple of months we will not have our usual Wednesday’s to spend together. When I woke up on Wednesday I didn’t know what to do. We always have breakfast together and then do something fun for the day. This time I didn’t have anything planned and wasn’t sure what I should do. So of course to the internet I went and came upon this recipe.
I did change the recipe a bit. For the topping I was a bit nervous about the two sticks of butter that Christy of The Girl Who Ate Everything and Jenny of Picky Palate put in. I couldn’t bring myself to do it. So I cut down the butter to one stick and it came out delish. IF you are feeling adventurous try the two stick version that they both have on their websites and let me know how it came out.
3 cups flour
¼ teaspoon salt
1 cup sugar
4 teaspoons baking powder
1 1/2 cups milk
2 teaspoons vanilla
1/2 cup (1 stick) butter (melted)
1/2 cup (1 stick) butter (softened)
1 cup brown sugar
2 tablespoons flour
1 tablespoon cinnamon
3/4 cup chopped pecans, (optional)
2 cups powdered sugar
5 tablespoons milk
1 teaspoon vanilla
Preheat oven to 350 degrees.
In an electric or stand mixer mix the flour, salt, sugar, baking powder, milk, eggs and vanilla. Once combined well, slowly stir in the 1/2 cup melted butter. Pour batter into a greased 9 x 13 inch baking pan.
In a large bowl, mix the 1 stick of softened butter, brown sugar, flour, cinnamon and pecans until well combined. Drop evenly over cake batter by the tablespoonfuls and use a knife to marble/swirl through the cake.
Bake at 350 degrees for 30 minutes or until toothpick comes out nearly clean from center.
Place powdered sugar, milk and vanilla in a large bowl. Whisk until smooth. Drizzle over warm cake.
Serve warm or at room temperature.
